Eid Baking.


Cake is an essential when it's Eid time - That's when the baking hits it off. So since Eid is tomorrow, I thought I'd share with you guys a quick recipe on how to make a simple 2 layered sponge cake. To find out more, follow the link for a little treat...



Ingredients:


Cake:
  • 175g of margarine or softened butter
  • 175g of caster sugar
  • 175g of self raising flour 
  • 3 large eggs
  • 1tsp of baking powder
  • 1tsp of vanilla extract

Icing:
  • Double cream
  • Icing sugar
  • Vanilla extract



Method:
  • Preheat the oven to 180°C and make sure you have all of your ingredients ready to start baking. 

  • Lightly grease two round cake tins with a little bit of extra butter or margarine and cut a piece of greaseproof paper or non stick baking parchment to fit the base of the tins.

  • Put all the ingredients into a large mixing bowl and beat with a wooden spoon or a hand-held mixer until the mixture is smooth.

  • Pour or spoon the mixture into two tins equally, smooth the tops and bake on the middle shelf for about 45 to 50 minutes. 

  • The cake is cooked when it looks well risen and golden or when the top springs back up when lightly touched by a fingertip. Another test is to insert a skewer into the center of the cakes - it should come out clean.

  • Let the cakes sit in the tins for 5 to 10 minutes, before trying to decorate with icing. 

To make the icing, all you have to do is:


  • Beat together, using an electric mixer, double cream and icing sugar

  • Add a bit of vanilla extract to the mixture and wait until the mixture is completely smooth



Tips:
  • If you want to make a larger cake, just double the ingredients (that's what I normally do)
  • If you don't like seeing lumps in your mixture, the best thing to do would be to sift your caster sugar and flour 
  • Instead of adding all of the ingredients together straight away, mix the butter or margarine first, to prevent any future lumps
  • When I use this recipe, I usually hand mix the mixture with a wooden spoon, as I think I get a better result than using an electric mixer
  • Always keep an eye on the cakes when they're in the oven
  • Try not to over mix the double cream, because you won't be able to get it back to the right consistency 
  • Stick with your instincts... if you think the cakes and/or the icing is done, then it probably is
  • Have faith
